Wash as much basil leaves as you can get. (minimum 2 quarts). Process the
leaves in a food processor or a
blender with olive oil, parmesan cheese and garlic to make a smooth paste. Proportions are aproximate
but you need about 3/4 cup of oil, 8 - 10 garlic cloves (three tablespoons chopped garlic) and about
1/2 cup cheese. You will need to add enough oil at the begining to get the leaves started. The cheese
can go in at the end. When it is almost done, add about 1 cup of pine nuts and chop them roughly.
As a variation, which have less of a licorice taste, add equal amounts of fresh spinach, and parsley
to your basil.
